Avocado Toast with Scrambled Eggs

  • ½ ripe avocado
  • 2 slices sourdough bread
  • 2 eggs scrambled
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp chili flakes
  • ½ tsp oregano
  • lemon juice to taste

Instructions
 

  • Place the sourdough bread slices in a toaster and toast until golden and crispy.
  • In a bowl, squash the avocado with a fork until smooth. Add salt, black pepper, chili flakes, and oregano, then mix together until well combined.
  • Adjust the avocado mixture by adding lemon juice to taste, and stir it well.
  • In a pan over medium heat, scramble the eggs until they reach your preferred consistency. Make sure they are soft and slightly creamy.
  • Spread the seasoned avocado evenly on the toasted sourdough slices. Top with the scrambled eggs.
  • Sprinkle additional chili flakes on top if desired, and serve immediately.

Notes

For extra creamy scrambled eggs, cook them slowly over medium-low heat and stir continuously. Adding lemon juice not only brightens the flavor but also helps prevent the avocado from browning.
